Chicken and clam chowder?

by John Treder » Thu Sep 25, 2008 12:39 am

I made some clam chowder and had some left over. That's better than being besieged by screaming, starving natives!
It's a white chowder with considerable pepper. I'm thinking about browning some chicken pieces and then braising them in the leftover chowder.
Does that seem like a good idea?

I don't suppose it'll hurt anything to do it and doubt you'd be the first to try it, but I don't think they really go together well. In food analyst or chef speak--the flavor profile isn't compatible!
On the other 'chowder' hand, chicken and corn chowder are a terrif combo.
Please let us know how it came out and if you'd do it again.

Many of the local volunteer fire companies make chowder in huge pots as a fund raiser. Each company has it's own recipe, some going back 100 years. One of the fire companies uses clam broth and chicken. It's not bad, but I prefer the chicken and beef (with lots of cabbage) made close to my home.

I'm with Shel. It won't taste bad, but it's not an intuitive combination. The chicken will probably give the chowder better flavor than the chowder will give the chicken. And since the point of the dish is the chicken, why not braise the chicken in something more compatible involving wine, say, and serve the chowder as a starter soup or save it for lunch?

Hey John, if you're looking for something to add to your leftover chowder, that really compliments it, try either frying up some bacon and cutting it into bits,or saute some hot Italian sausage, or if you wanted to go the "southwest" route, sauteed chorizo or andouille and a dab or two of cumin with some added chopped green chilis.

My chowder has bacon in it already. That's the way Mom made it!
I decided to put the chowder aside, after I looked over what else I had handy for dinner, and made lemon chicken and tomatoes sauteed in olive oil with garlic and basil. Because I had some tomatoes that were sitting on the vine and demanding to be picked.

It was good, and the chowder can make a lunch one day.
