I love this time of year

Last night I had a very simple dinner. Marinated, roasted chicken thighs, just picked acorn squash, baked with nothing but butter, fresh sliced tomatoes with EVOO, a few glasses of my home made wine and for dessert, fresh cider. :P

I love this time of year as well, especially since it has started cooling off. I love the simple dinners with fresh, out of the garden eats. Last night was grill roasted beer butt chicken with no beer. I rubbed it down with evoo and then a spicy, red rub all over. Put some white wine in the hole, and fresh lemons down the neck of the bird. The chicken came out a beautiful color with crispy skin. Eggplant slices dipped in butter and rolled in panko, topped with my home made tomato sauce and mozzarella cheese and oven roasted A tomato paella was beautiful with alternating thick slices of red and yellow tomatoes. Yummy!
