Speaking of ketchup

Does anyone have a good recipe for making apple ketchup? I don't often eat ketchup, but at Mustard's Grill in Yountville I had the MOST fabulous onion rings and they went splendidly with the house made apple ketchup.

As I am about to undertake the process of trying to replicate those onion rings, I'd like to try for the ketchup too.
