A Steak Experience

Normally I can eat a huge steak and want another for dessert, so when I was invited to a party with t-bones, I really looked forward to it. The host grilled me a beautiful, large t-bone and some corn-on-the-cob. The more I ate, though, the saltier the steak was and the less it tasted like a steak. I had to work to finish it and was glad when it was over--a new experience for me.

I spied some uncooked steaks covered with some kind of rub and before going home, the host gave me one. When I arrived home, I scraped off the rub and ended up with 2 Tablespoons of whatever it was--on one steak! No wonder it was so salty. I don't know what kind of rub it was, but I could see fragments of some leaves (oregano?) and probably garlic, salt and who knows?. Ack. Talk about overdoing it and ruining steaks.

Irregardless of the quality (store brands tend to be primarily salt based (cheap and takes up a lot of space)) that's an exorbitant amount of rub. I've mentioned I moonlight in a spice shop. I typically tell folks to lightly cover the meat and, until they get an idea about the strength and flavor, to start by only doing one side of the steak/chop/etc. The idea is to enhance the flavor of the meat, not mask it.

I was surprised. The hostess is an excellent cook and doesn't buy cheap stuff. But it was an honest 2 Tablespoons per steak. Perhaps her husband thought more was better.
