Chicken breast, summer squash. Inspiration needed

Okay, I'm looking at the larder and thinking about creating an easy dinner dish with chicken breast and summer squash. I don't have an inspiring concept yet, but I'd like to come up with something more interesting than (1) sautee chicken breast and (2) steam or sautee sliced summer squash.

Ideas, anyone?

Nice, but I live in the Ohio Valley and may not have all the necessary Southwestern stuff in the larder. Huh, I do have some really good Milagros tortillas, though. Let me look into this ...

We've (well I've to be honest) done stir fried chicken & Zucchini a couple of times this summer. The Zucchini didn't need long to cook, neither would other squash I suspect.

Cream of squash soup with garlic and parmesan crackers and pounded chicken breasts stuffed with parmesan/sun-dried tomato/bread crumbs, rolled up and sauteed.

Or something like that.

Thanks, all! I shouldn't have waited so late to post ... I ended up making a dinner-in-a-dish with a Moroccan influence.

Piddling around in Google for ideas and then built my own quick dish: Cut the chix into bite-size cubes and tossed them in a Ras El Hanout spice mix that Celia had sent me from Herbie's spice store in Sydney. Browned onion and garlic and a little red-pepper flake in olive oil, then added the spice-dredged chicken pieces until everything was good and brown. Meanwhile, I quartered and sliced three smallish summer squash, steamed them until al dente to get them started. Added them to the chicken and spice mix, cooked covered for a few minutes, and then stirred in the juice of a lemon and about 1/4 cup of chopped green olives. Served over couscous and called it dinner. On the side some crisp sliced garden cucumbers simply dressed with thin-sliced raw sweet onion and tossed with cider vinegar and a few ice cubes. Was good, and got even better with a Sicilian Chardonnay.

Thanks, Carrie. It was really a pretty simple dish except for the Ras al Hanout, and I have to give Celia credit for that!
