Colin asked me to post this. As far as cookie recipes go there is not much variation: cream the butter and sugar, mix wet and dry, blah, blah, blah. But he chose the ingredients and I found it interesting that he picked AP and Cake flour, Billington's Dark Brown Molasses sugar, and chocolate chips (Callebaut) AND M & M's. He calls them Dough Deluxe Chocolate Chip M & M Cookies.
3/4 cup AP Flour
3/4 cup Cake Flour
1/2 tsp baking Soda
1/4 tsp Sea Salt
1 Stick Unsalted Butter (room temp)
1/2 cup packed Dark Brown Sugar
1/2 cup granulated sugar
1 egg
1 egg yolk
2 tsp Vanilla Extract
1 1/2 cups Chocolate chips
1 cup M & M's
1. Sift the dry ingredients together
2. Cream the butter and sugars until fluffy
3. Add the eggs and vanilla to the butter/sugar mixture and beat until smooth
4. Add the dry ingredients and mix well.
5. Add the chocolate chips and M & M's and mix well.
At this point you need to eat some dough!
6. Chill dough for 30 minutes to 3 days (optional, we did not chill)
7. Put the dough on a parchment-lined cookie sheet in spoonfuls. Bake in a preheated, 350* oven for 5 minutes. Rotate pan and bake for 4 - 7 minutes more.
8. Cool on a cookie rack.
9. Eat.
