Chai Masala
There are hundreds of Chai masalas to choose from, this is just one of those.
1.5 cups water
1” piece of Ceylon cinnamon stick
8 green cardamom pods partially crushed
8 whole cloves partially crushed
10 Malabar black peppercorns
2/3 cup half and half
3.5 teaspoons black tea
1.5 teaspoons dark brown sugar or Jaggery (Gur) Indian sugar or white sugar to taste
In a tea kettle add water and spices. Bring to a boil, lower heat and simmer for 6 minutes. Add half and half and sweetener, return to simmer for 1 minute. Off heat add tea and steep for 6 minutes. Serve with sweet Dosa or sweet cakes.
