Smoked salmon - The process day one

I thought it may be interesting to a few to see the process for home smoking salmon from start to finish. So these notes and pictures will illustrate the processing for 3 sockeye salmon, 2 males 1 female, caught Friday morning in the San Juan Islands, Washington.

The first step is to clean and fillet the salmon.

Smoking cure is placed on both fillets in preparation for wrapping and refrigeration which will follow in the next topic.
