What to do with Mint?

The mint in my flower boxes is going crazy...anyone have any suggestions other than mojitos and tzatziki?

What kind of mint is it. If it is common garden mint I'd recommend mint sauce. You can make a big batch and store it in a screwcapped bottle or jar - it last and lasts, and is beautiful served with lamb backstraps or mini lamb roasts. Served this way it can also complement the flavours in some herbaceous-edged cabernets or Bordeaux-styled reds. Some Aussie ones are definitely quite minty too.

That reminds me, I've had Green Tea with Mint, which really was rather refreshing. Your Moroccan mint tea sounds rather delightful too.

Excellent suggestions!

Sue - I just finished the sauce. It will be perfect since I made a butterfly leg of lamb the other day and still have quite a bit left over...Thanks!

Stuart - just placed an order for some rice paper for summer rolls...gosh I love them! Can you elaborate on the peach and cheese bruschetta? I have some lovely peaches right now.

Mike - tell me more about this tea. I have added some leaves to green or black tea which is good...but this sounds fabulous.

Mint is great on carrots with butter, in fresh peas, fresh corn with butter, with any type of lamb. Go to Epicurious and type "mint" in the search box and you will get a lot of ideas.

Brew up some very strong black tea from loose tea leaves. Fill a tall glass with ice and a large sprig of mint. Bruise the mint leaves a little. Pour the tea over. Let it sit for five minutes, then enjoy!

Here is a recipe I posted from the archives. It is company worthy and very special and used a good helping of mint.

Grilled Salmon with New World Pesto

New World pesto:

8 cloves garlic

2 shallots

1 cup fresh basil leaves

3/4 cup fresh mint leaves

1/2 cup fresh cilantro sprigs

Packed cup roasted cashews

1/2 cup extra-virgin olive oil

1/2 teaspoon salt

1 teaspoon Asian chile sauce

1/2 cup freshly grated Parmesan cheese

In a food processor with the motor running, drop garlic down the tube followed by the shallots. Add mint, basil and cilantro and mince finely. Add nuts and mince finely. With motor running, add the oil in a slow steady stream. Add the salt and chile sauce, and process for 10 seconds. Add cheese. Set pesto aside.

Marinade for the salmon:

6 tablespoons lemon juice

1/4 cup light olive oil

1/4 cup white wine

Teaspoon freshly ground black pepper

Whisk together all ingredients. Pour over 2 lbs. fresh salmon filet. Marinate 15 minutes.

Grilling the salmon: Lay salmon, skin side down on a pre-heated grill. Cover and cook about 12 minutes, or until it begins to flake with poked with a fork. Carefully lay a spatula under the salmon and lift off grill, leaving the skin on the grill. Put fish on a platter.

Putting it together:

1 cup whipping cream

1/4 cup white wine

1 cup freshly grated Parmesan cheese

Bring cream and wine to a rapid boil. Add 1 cup New World Pesto sauce. Spoon over fish. Serve immediately, accompanied by the freshly grated Parmesan cheese.

Maria, it's insanely easy. Take some suitable Italian bread, slice, oil, and grill. Slice peaches thinly. Spread a soft cheese with some bite (Red Hawk is a good choice, or gorgonzola dolce if you like blues) on the bread, then top with the peach slices. Sprinkle shredded mint, then give a drizzle with a high-quality olive oil.

In carrot salad (shredded carrots, lemon juice, orange juice, dried currants, black pepper).

Make pesto (use mint instead of basil); prepare cheese ravioli on a hot day.

Dry it and make sachets. :^)

Maria, there have been a lot of delicious mint-centric recipes posted on this forum. In the Search box in the upper right of your screen, enter 'RCP mint', but without the quotes, and peruse what turns up.
