Tunisian Pepper Salad (Mechooia)
6 Anahiem chili or 2 anahiem and 4 pablano
4 red bell peppers
2 garlic cloves
3 plum tomatoes
Roast all of the above on a grill until blackened. Peel and dice for salad. Mince the garlic and rub into a paste. Add paste to vegies.
Add 2 teaspoons Tabil spice (recipe follows)or more to taste.
¾ tspns salt
juice from ½ lemon
2 tblspns evo
1 tspn capers minced
Tabil
1 tblspn ground coriander seeds
1 tspn ground caraway
¼ tspn garlic powder
¼ tspn cayenne powder
¼ tspn curry powder
Store leftover as you would any good spice.
Enjoy.
