Enough barley to feed Kansas!

What was I thinking when I put two bags of barley in a big kettle of salted water to cook???? I wanted about 8 cups of barley. I got about 8 quarts.
My wine shopping and I have never had a problem. Just a perpetual race between the bankruptcy court and Hell.--Rogov

It's so easy to do, Jenise. I always add barley to my split pea soup because I love the contrasting chewy texture. However, I never measure, and those little barley pellets always look so--well--little, so I always add way more than I should. It makes the soup much "thicker than pea soup." Ridiculous, really.

What were you using the barley for?

I'm making a salad with it. See Traci's recipe for the Farro and Herb salad--barley is a wonderful nutty blank canvas for dressings and strong ingredients. And that chewiness you mention is a real plus, as compared to salads made with rice, say.

I'm thinking that you could do a variant on tabbouleh.
