What Herbs do You Grow?

We have cupboards full of herbs and spices, but the ones we use all the time we usually grow if they are hardy here, or canbe pot grown.

We currently have:

rosemary
parsley (regular)
parsley (flat leaf)
cilantro
sage
marjoram
thyme (several sorts)
chives
green onions (OK, more of a veg than a herb)
mint (2 kinds)
basil
borage

That's more than I'd have thought until I started to list them - guess they just accumulate. Does anyone else grow anything I should consider adding....?

Your list sounds pretty much like the temperate North American standard, and pretty much matches ours.

We've got perennial stands of sage, tarragon, thyme, oregano, various kinds of mint and rosemary - we're just at the northern edge of winter-hardiness for rosemary and generally have to drape it with a tarp on the occasional winter night that drops to 5F or below. We generally plant basil, cilantro and Italian flatleaf parsley plants in the spring. I'm probably overlooking a couple, but we definitely have a yard full of herbs, and use most of them in cooking.

I've been unable to plant anything in the ground so far this year due to all the rain. (I'm in Iowa)

I'm going to commit some herbs to pots tomorrow and hope for the best. I'll try chives, parsley, rosemary, oregano, thyme and basil. I don't get the best of sun, but I'll see what takes.

Much the same as others:

Sage
French Tarragon
Oregano (unk variety)
Lemon Thyme
French Thyme
Rosemary

We get annuals at the farmer's market.

Parsley (curly and flat - more planted last weekend. Both equally as good, IMO).
Mint (common garden, spearmint and some rather strong vietnamese mint that I have no idea what to do with).
Sage ( common green, variegated and purple)
Rosemary Sage (which seems to be a completely different type of sage with a softer leaf and red trumpet flowers)
Rosemary
Thyme (several types - favourites included lemon t. and pizza t., which has bigger leaves).
Basil (classic sweet basil, plus thai b. and lemon b. both have narrower, more pointed leaves, and last and last and last. The caterpillars love these. I also like to get some purple basil plants in summer - they smell like the 'cats pee' in sauv blanc.)
Oregano
Lemon balm
Coriander (= cilantro)
Chervil
Chives
Garlic - seasonally, sometimes.

Plus fennel - I want to grow fields of this herb. As Mario Batali says, there are six parts to fennel - the bulb, the stems, the fern, the flowers, the pollen and the seeds.

We've also tried tarragon and marjoram

Some of the plants I let go to seed and use the flowers and seed (esp. fennel and cilantro).

Funny, I forgot about fennel - beacause I grow it as an ornamental not an edible (although it is the same species so I could certainly eat it). Those airy tops are very pleasant looking in mixed border and it is perennial here.

Wow, Bill, I'd say that's a long list!

We just got to NC and we don't have a good gardening area here. I usually do pots out on the back deck, and will put some together tomorrow after I have the chance to go to the nursery.
Since I don't have a green thumb, I don't go too crazy either. I like to grow a few herbs of what I use most. In order of what I use most, they are:

Flat leaf parsley
Rosemary
Basil
Oregano
Chives

I forgot the mint because it is not in the herb garden, but at the rear of one of our flower beds. There is both spearmint and peppermint and we fight both back regularly with a machete!

Mint (chocolate and some other kind - currently taking over a corner of the yard)
Basil - three varieties, all self-seeding
Thyme - at least 6 types, doing double-duty as fillers between flagstones in the walk
Rosemary
Dill
Fennel, green and bronze, although those are more for the butterfly young
Chives
Oregano

You should collect the pollen when it comes to that time. It really is magical.
Also, chewing a bit of stringy fennel stalk is a bit like chewing gum. you can't swallow it and it does freshen the breath. You have to like the aniseed-like flavour, though.

This is my first herb garden. I have:

Basil
Mint (2 kinds)
Rosemary
Thyme (not doing very well)
Chives
Tarragon
Cilantro (Something is eating this!)

Uhgg...Everything I planted is flooded under water. We got hit by that “100 Year Flood”. Total loss this year.

I was on a short trip last week and my basil, which had not been doing well, passed on to Herb Heaven. OK, I have to find something I'm incapable of killing.

It's certainly not me! :P

Very small operation here this year as I have no place for a proper garden in this new rental house. :( (Which is really the only thing wrong with it.) For herbs I have only pots of: basil; oregano (yes, for pizza sauce!); rosemary; thyme.
