Chef,
I am sitting here today with a 4 pound bone on pork loin roast about ready for the grill. And of course pork makes me think of pulling a boston butt. I make and use your BBQ sauce as well as your rub, and get compliments often. All this makes me wonder if you have a recipe for a vinegar based and a mustard based (North Carolina/South Carolina style) bbq sauces. And if you do, would you share? Thanks in advance.

I'm not Chef J, but FWIW:

NC Vinegar Sauce

1.5 c cider vinegar
1 c water
1 TBS sugar or more to taste
1 TBS hot red pepper flakes
1 small onion, thinly sliced
1 jalapeno, thinly sliced
2 tsp salt or more to taste
1/2 tsp black pepper

Combine, stir until all ingredients are dissolved. Adjust seasoning, if needed. Use same day.


Vinegar-Based Mop Sauce

1 qt cider vinegar
1 med onion, thinly sliced
3 jalapenos, thinly sliced
4 tsp coarse salt
2 tsp hot red pepper flakes
2 tsp black pepper

Makes 1 qt

Carolina Mustard Sauce

1/2 c mustard
1/2 c honey
1/4 c light brown sugar
1/4 c white vinegar
s&p to taste

Combine first 4 ingredients in nonreactive saucepan, whisk to mix. Bring to simmer over low heat. Cook gently uncovered about 5 minutes, whisking from time to time. Remove from heat, season with s&p.

Thanks Larry, I'll try these, and especially like the mop sauce. I've had vinegary sauces and liked them, and am fully against the real sweet catsup based sauces. I guess that is why I like Chef J's bbq sauce so well, it is not real sweet, and it has a little bite to it.
