RCP: Tarragon Lemon Dip/Dipping Sauce

Spring sprung early in the Desert ... my brother, Mark, is already harvesting the row of asparagus he has behind his home on his lemon ranch ... here is a great dipping sauce for asparagus I found on the Food Network ... BTW - while I'm not a big fan of green beans, this same dipping sauce has sure flavored up my taste buds for THAT green veggie !

1 C Mayonnaise
1 Fresh lemon, zested and juiced
1 Small shallot, finely chopped
2 T Fresh tarragon (4 sprigs), chopped plus a couple sprigs for garnish
2 T Fresh parsley, chopped plus a couple sprigs for garnish
A few grinds of fresh black pepper

Combine the ingredients in a small bowl, place the bowl on a matching plate/saucer, and place the fresh sprigs of tarragon and parsley on the plate/saucer around the bowl for garnish ... dip away !
