Got a couple of baggies of these with the CSA basket. Anyone have any ideas on what to do with them other than just eat them?

You can put them into cookies or muffins. Last year I tried freezing fresh peaches just like I do berries, to have in the winter. They were fine when still a bit frosty, but the remaining peaches turned dark and were awful. I think I will try drying them this summer.

Hmmm...a fruit confit with fennel seeds and peppercorns to spoon over good goat cheese? Just soak in warm EVOO. I've soaked sun-dried tomatoes that way and combined with garlic and parsley to spoon over brie, and have confitted fresh bing cherries in summer for chevre. Should be great with peaches.
