Leftover cake recipes ?

by Celia » Wed Feb 20, 2008 8:27 pm

I've just read a lovely quote online which said "leftovers are the gift of abundance", and I guess that's how we should view them. So today I'm wondering what to do with the leftover piece of white chocolate cake that I made last Sunday. We have a mate over for dinner tonight, and I'm wondering if I can morph this cake into a clever dessert. I could make a berrymisu (which I've posted before, basically cake layered with mascarpone, cherry sauce and frozen blueberries), but wondered if anyone had any other suggestions ? I guess I could always make rum balls too...

Is it just plain cake or does it have stuff gooped all over it? If it's covered with frosting, then slice a strawberry and serve it with a ruby port.

If it's just a nekkid lump of white chocolate cake, then a little dark chocolate sauce (melt a few chocolate chips) and some whipped cream or ice cream. It's unlikely to get too chocolatey.

No such thing as "too chocolatey."

Thanks John. In the end, we had it layered with blueberries and mascarpone - worked a treat !

I was gonna say Trifle or Tiramisu but you pretty much got the idea.

Blueberries...yum yum yum.
