I was roaming around my "pantry" (wish I had one) last night trying to figure out what to make that was easy and quick.
I found a can of Rosarita's jalapeno-flavored refried beans (98% fat free). Aha! I had some corn torillas in the refrigerator.
I brushed a little oil on each side of 5 torillas (less than a tablespoon total), laid them on a cookie sheet and baked them at 350F for 5 or 10 minutes until they were golden and crispy and a little chewy. Then a dollop of warm refried beans, some shredded cheese, chopped onion and tomato, and lettuce strips. A side of hot salsa.
Accompanied by lots of rice and some pickled jalapenos, it was a delicious low-fat and not-too-high calorie meal. I'm definitely going to do the oven thing again instead of frying the tortillas.
