Champagne vinaigrette:
1/4 cup champagne vinegar
1 tsp kosher salt
1/4 tsp black pepper
1 TBSP sugar
1/2 tsp Dijon mustard
1/2 to 2/3 cup canola oil
(Also can use a little walnut oil)
This dressing is especially good on baby spinach, or field greens with fruit such as sliced strawberries tossed in.
Italian dressing:
1/4 cup red wine vinegar
1 garlic clove (minced)
1 tsp kosher salt
1/2 tsp black pepper
1/2 tsp Dijon mustard
2 tsps sugar
1/4 tsp dried Italian herbs
1/2 to 2/3 cup EVOO
Optional: 1/4 cup grated parmesan cheese
