Here's a recipe that's doing the rounds in NZ at the moment and it's something that Bill doesn't have on his citrus recipe site. It's a cake made with a whole orange, although it's also delicious with a whole tangelo as we've found out now that the tangelo season is kicking in.
Put one whole orange (or tangelo) into the food processor
Add 125 gms ( 4oz) melted butter
1 ½ cups sugar
2 eggs
Blend until smooth
In another bowl sift in 1 ½ cups self raising flour ( or use normal flour and add 1 -2 teaspoons Baking Powder)
Pour in the liquid from the food processor. Mix together until smooth
It is a batter consistency – heavy run off the spoon.
Place in a tin or ring mould into a moderate oven (160-180C or 320-350F) and cook approx 30-40 minutes.
Can also make muffins, but bake for a shorter time.
Yum! It's like a Madeira cake in lightness, texture and appearance (except for the orange flecks). You can ice if you wish, but it doesn't need it.
