RCP: My Holiday Nuts

Down Princess!! Down Celia!! Not THOSE nuts. The nice little nuts you put in nice little bowls on nice little tables during those nice little holiday parties. I love these things and actually make them for any occasion.

1 lb. Roasted Unsalted Cashews
2 Tbsp. Fresh Rosemary, minced
1/2 tsp. Cayenne or Smoked Paprika
2 tsp. Light Brown Sugar
1 Tbsp. Kosher Salt
1 Tbsp. Unsalted Butter, melted

Preheat oven to 350 degrees.
Spread the cashews in a sheet pan and roast for 5 minutes.
Mix all other ingredients in a bowl, add the hot nuts and toss well.
Serve warm but they hold fairly well and taste great at room temp.

Nice recipe, btw. Unfortunately we have a small boy who's allergic to cashews, but I guess we could use brazil nuts ?

As to your boy, well, I'm sorry to hear that he is allergic to cashews and you could probably use brazil nuts. Although macadamias might be better.

I'm also glad to hear that you are so...attentive to posts about my nuts. :)

Brazil nuts are some of my faves, Celia. I actually make a very, very similar recipe (for ACTUAL holidays) that uses pecans or almonds. I don't see why any kind wouldn't work.

And thanks for leaping to my defense, girlfriend! It's good to know who my friends are! 8)

Nothing short of a heartfelt apology and grovelling will suffice.. :)

And you're right, acorns probably would suck. We can only do almonds, brazil nuts and hazelnuts, the rest are verbotten. Cashews are his worst (and pistachios - apparently they're the same nut protein), walnuts, pecans, and peanuts.

My favourite nut recipe is toasted slivered almonds tossed in sugar and then coated in tempered dark chocolate...hmmm.... makes nice Christmas presents. Of course, I'm not doing them yet, because it's nowhere near that time of year... :roll:

Ha ! You don't scare me ! Bring on the trick... :)

Actually, I'll do the next best thing - here's the recipe :

2 cups slivered almonds
1/2 cup powdered sugar
1 tsp kirsch
1lb bittersweet chocolate broken into pieces (I use the Callebaut 811 dark callets)


Method :

* Place almonds in bowl and sprinkle with powdered sugar. Add kirsch just to moisten nuts. Stir until nuts are evenly coated with sugar. Spread nuts on sheet pan. Toast at 375 degrees until golden, about 10 minutes, stirring frequently. Remove from oven and set aside. When cool, put them in a large mixing bowl. DO NOT EAT THEM ALL AT THIS POINT. :)

* Temper the chocolate - easiest way I've found is to *just* melt about 80% of it in the microwave, then stir in the remaining 20%, and keep stirring until the chocolate is all melted in (this presumes your chocolate is in either easy melting callet form, or you've chopped it quite finely). When the chocolate starts to thicken, pour it over the cooled nuts and stir quickly.

* Portion out mixture with teaspoon onto baking sheet lined with parchment paper. Refrigerate until firm, 1 hour.

* This recipe yields 48 pieces, depending how much you eat on the way through. :)

Robert, I'm sure these are delicious. I've made them a few times from an almost identical recipe in Ina Garten's Barefoot in Paris cookbook. They also freeze well, so I usually make a big batch, freeze, then only take out what I need for each gathering.

I do an almost identical recipe from the Union Square Cafe Book, but starting with raw mixed nuts heavily dosed toward pecans (because the coating sticks to them so well) and in which the almonds are blanched for a more elegant look. They are absolutely devine, and great for serving around champagne.

Because I missed chat today I must agree with Cynthia and say that Halloween, while fun, rates somewhere between Columbus Day and Veterans' Day on the REAL holiday list. (I really don't get why we have a holiday for Columbus and not, say, Franklin, or Madison.)

The nut recipe looks good. Are you sending some to all your chat buddies? :lol:

Veterans' Day is a REAL holiday, somewhere after The Fourth of July and Memorial Day, but ahead of Labor Day and certainly ahead of Columbus Day and Halloween! I was just making a pun about where Halloween fits in the calandar.
