Aw righ' ma'eys. Arrrr! Me had some veggies wi' a bi' o' color in 'em jes layin' round goin' ro'en. Arrrr. So me's cuts 'em up fer dinner!

Ge' ye some eggplant, cube it and salt it.

Cube some yeller squash.
Slice up some purple, red, and green bell peppers. Arrrr.
Slice up some onions.
Slice up some garlic.
Slice up some right pretty heirloom tomatoes.
Arrrrr, and don't forget the basil chiffonade. Arrrrr.

Sautee the whole bleeding mess in a puddle of EVOO, matey. Put the basil in last. Arrrr.

Salt to taste and put is on some pasta ye blimey land lubbers!

And I happen to have a brand new jar of Penzy's Smoked Spanish Paprika on the counter and couldn't resist putting that in, either. The whole thing looks and tastes like a Dali. Yum!

Actually Cynthia, sea water will dehydrate you. Should you ever be stranded at sea then try and catch a sea turtle and drink it's blood. Turtle blood has thirst quenching properties.

But for the record, I think a nice Spanish tempranillo would go well with the aforementioned Dali Pasta.
