What do you do with green tomatoes ?

I am hoping for an Indian summer but it has dipped to the high 40's here for a few nights and I am wondering how not to waste all the unripened tomatoes. I would love to process them into some type of sauce for winter pasta . Any tried and true recipes ?

Slice them, then dredge in seasoned cornmeal & fry em!


A little salt, pepper and a glass of iced tea. Beats eggplant any day :D

What we do with 'em is to bring 'em in, put 'em in a basket, and let 'em ripen up. Most do.

I believe you can pick them. put them in the house and they will turn red over time. Not as juicy or tasty as vine ripened, but you could still can or cook with them.

after being hit by blight a couple of years ago, we've discovered that green tomatoes are a wonderful vegetable in their own right.

green tomato curry is absolutely gorgeous. we also use them in any recipe where you'd use ocra (not a favorite of ours), in hot pots and cobblers and the like. they also go surprisingly well with tinned tuna and salsa in a pasta bake for a quick midweek meal.

as long as you fry them off lightly before incorporating them into whatever you're doing, they're great. if any are infected, then just cut away the bad bits and use the rest. we now grow extra tomatoes every year just so we can crop green ones.

hope this inspires you to experiment with them. :D

Thanks Cynthia. I've been a Robin e-zine subscriber for quite a while now, but never got round to registering with the Forums. Speaking to him by e-mail the other day prompted me to get my lazy fingers to do something about it. And I'm glad I did, although I think looking at the myriad of interesting threads it could prove to be rather addictive. :)

I've just recently grown to appreciate the joy that is a green tomato. I recently had panko-coated green tomatoes with goat cheese and capicola ham at a restaurant, and made it at home. Seriously good.

Thanks Shelley. I've been thinking about roasting green tomato slices in olive oil and garlic, topping with goat cheese till melted then dressing with balsamic and basil, serving over toasted baguette. With your reference my idea may not be too far out.
