Fries on their way to becoming chile cheese fries for dinner tonight. They were perfectly done, crisp on the outside, tender on the inside. We ate way too many. :oops:

Sure, Salil. It's New Mexican red chile, not Texas Chili. It can be found in this thread. We usually have green chile too, but we were out. We had some of this in the freezer from a couple weeks ago. (I now need to make more.)

Cynthia, those look criminally good. I don't own a deep fryer because I don't want the power to make things like that at home--the things I can do are dangerous (dietarily speaking) enough!

No kidding! I didn't own a deep fryer until last autumn. A woman I call my Cooking Fairy Godmother* - whom I've known for 15 or more years on a cooking discussion list - sent it to me when her husband was told he had to lay off fried foods. We make onion rings, and French fries, and sweet potato fries, and falafel, and......

Yeah, it's dangerous. :?

*Over the years, she has also sent me piles of cookbooks and extra whisks and beaters for my Kitchen Aid mixer. When I was given a trip to Paris, she sent me all the French cookbooks she could find on Amazon, along with "The Food Lover's Guide to Paris." She is just so generous and thoughtful to everyone she knows!
