I thought confit was a way to store goose or duck without refrigeration. You slow-cook it in goose/duck fat for a long time with lots of salt then pack it in jars under a layer of fat. Goose confit is one of the main ingredients in cassoulet.

Regarding Seville oranges, our local supermarket carries them under the name "sour oranges". But not in all stores--just the two in Nashua NH that the Brazilians shop in.
