Took a look at this thread again as I am planning a small bubbly tasting whenever we come out of lockdown up here, and am busy thinking up cocktail type foods that go with Champagne. One of them is Chinese dumplings served with soy, and it has to be light soy to work (good primer on soy sauced, BTW Larry). Sweetened dark soy just won't match well. with that sort of wine.

Light soy sauce with minced ginger and scallions goes very well with pot stickers and other Chinese dumplings.

I have several brands of soy sauce and tamari. One I like is Kim-Lan Premium Soy Sauce, which was recommended by Jenise a couple of decades ago (how time flies). Should work for you.

My favorite light soy sauce is Pearl River Bridge Golden Label. But beware of imitations. There are knock-off brands such as "Pearl Gold Bridge" that mimic the Pearl River Bridge label. The label on the genuine article reads: "Pearl River Bridge Golden Label Superior Light Soy Sauce". The Golden Label is sort of like extra virgin olive oil--it is the first batch captured during the brewing process. Pearl River Bridge's regular label is also excellent.
