I also was not aware that there were so many srirachas and the many differences among them. I will certainly try any that are available here.

I'd be curious to know what are people's one or two favorite things to put Sriracha on.

Ken, my favorite ways to use sriracha:

marinade for shrimp destined for grilling
marinade for chicken wings
sometimes squirt into tacos
layer with other ingredients for a more complex heat in something
dipping sauce for fried fish or oven roasted potatoes wedges (in lieu of deep-fried French fries)
love it with Chinese smoked/roasted duck rolled in Vietnamese vermicelli pancakes and fresh herbs

I like a thick slice of country bread stuck under the broiler until the cheese is bubbly with sriracha drizzled over the top. Works even better with Tabasco Chipotle, but the sriracha's pretty good.

Today I went to a store I don't normally shop at -- my CO2 bottle from my SodaStream was empty and I wanted to swap it (with cash) for a new one. They had stopped carrying SodaStream which was very disappointing but I walked around a little and noticed -- they had Flying Goose Sriracha! I picked up a bottle and then I thought about it and picked up another one to give my son. I haven't seen it for years, probably at least 10 years. Have not tasted it yet but I anticipate it's gonna be good!

It was a large Shop-Rite on Centennial in Piscataway NJ.
