The cultural lessons of the day in included learning about Turkish toilets, and Paul Bert, of Bistrot and rue, a leftist political hero of the 1870's and '80's who died of dysentery in Hanoi while serving as a diplomat.
I'll try to find the name of another place I've been to twice; my sous vide pork belly cooking adventures were inspired by their dish, but without their finishing touch, a foam made with a 50/50 mix of heavy cream and rendered pork fat. Outstanding option for lunch, if I can find it.
Are you going anywhere outside Paris? I have really strong opinions about where to eat in Lyon and the southern Rhone region. And if you go to Alsace, don't order the boiled meat dinner.
