Seems like we get a mini run on Grains of Paradise every time Alton's apple pie episode is shown on Good Eats. Sell more of that for home brewers, actually.

It's a good alternative to black pepper. A little hotter, a little less (or differently) floral. Much in demand in Caribbean cooking (not that I do that).

I am checking this out, but a few years ago I was aware of a guy named Cozy Kline that made Handmade pepper mills. He like me, ( was a retired USAF man, but (unlike me) he was a former fighter and U2 Pilot. (who remembers the U2)? If he is still in business he would be past his 80Th birthday, and perhaps past the time for his works of art. Anyway, I am trying to ascertain if he is still in business, and if so, I am going to purchase a pepper mill from him. I am posting a URL, but as things in cyberspace goes, he may not be around any more. I will come back with specifics at a later date, or ASAP. BTW, his mills are really a work of art, and run around $75-80 so they are not cheap, but they are top of the line. Here two URLs.

I have the Unicorn Magnum Plus...it is the best pepper grinder I've owned. It is not especially pretty, but I keep it right by the stove. I have a pretty acrylic and chrome pepper and salt grinder set by William Bounds that I put on my table for guests who want to grind their own pepper or salt. I have a concern about the grinding mechanism for the salt as I think it might be metal. The salt will corrode the metal grinding gears over time.....I haven't taken it apart yet to see if they are nylon.

That's why it stays in the kitchen, where its virtues far outweigh its aesthetics. It's too big and delivers too much pepper-per-grind for the table, anyway. But when you need a solid dose of fresh pepper to finish a pot of risotto or some such, it's the way to go.

Bob, those are quite attractive, but I'm a modern girl in modern times, and here's the most beautiful pepper mill I've ever laid eyes on. My heart almost stopped when I saw the price, but snakewood...WOW.

I don't know, Jenise. A smooth finish means it slips out of your hands when your hands aren't dry.

Honestly, I dont think a person would use a $1,200 set of mills anywhere near the kitchen. Even so, smooth does not always mean sllippery.
