Bob, my teen years involved many mornings at deer camp, where the camp cook (he offered, and did it well) would fry up bacon, then fry eggs to order in the grease. On such meals was my spare tonnage built. :? :lol:

I think this was pretty common practice. Didn't everyone in those days have a coffee can full of bacon grease somewhere near the stove? We certainly did, and I confess I would occasionally dip a spoon or a finger in to have a taste off the top. My favorite memory of this kind of thing came from back in the early 70's sometime. I was on a photo trip exploring the mountains in Tennessee and ran across 2 old geezers early one morning that I wanted to photograph. They were quite friendly and entertaining and were probably entertained by me in some way or other (the Yankee in Appalachia) and invited me to have breakfast with them. The kitchen was pretty worn and primitive. The host opened an old beige metal cabinet and pulled out a large cast iron skillet full of grease (and I do mean full - within a half inch from the top), put it on the stove, turned on the flame, and when the grease was melted, put in the sausage patties. I forget if he fried the eggs in that same skillet or not, but the thought of that pan full of grease being pulled out of a cabinet still amuses me. I'm sure when the pan had cooled off it went right back into that cabinet. This would probably never happen today, but we sure have a lot more obesity now than we did back then...

Don't know how I missed this one.

We make two omelettes per week (weekend mornings), but when I do scrambled, I mix them well in a bowl first - and add a good dollop of sour cream to them as well, and whatever else I fancy, often just some fresh chopped chives.

Into hot butter in a non-stick pan and use a suitable plastic utensil to stir them about (funny, I use a stainless pan for my omelettes).

Now - anyone into shirred eggs? Don't seem to see that much in North America, but I had this English nanny that introduced me to them!
