Only place I've seen duck fat fries in the US is at Hot Doug's in Chicago (where I'll just eat them plain with salt - or dip the odd one into whatever crazy sauce the 'hot dog' was being served with.

Here in the US, I restrict myself to salt, but if there's home-made chile colorado or excellent green chile, I'll happily avail myself. In Holland, they have a sauce called "sate" which is hot, red, and wonderful.
