Sour cream's good! I love it in mashed potatoes. Just never added the cheese, and your comparison to twice-baked makes sense. It would be tasty enoiugh, but probably not what I want from a mashed potato.

Jenise, we had these for Thanksgiving. A friend who doesn't cook so much asked what she could bring and I sent her the recipe for these and had her bring them in a crock pot. They were better than I remembered. People couldn't stop eating them. When dinner was over, people were diving into the crock pot with clean spoons. They are extremely velvety.

Carrie, that's a good idea for the old crock pot. I really have a hard time finding a use for it - it just doesn't seem to suit the way I like to cook and eat. Can you please share the recipe ? Thank you!
