ROTFLOL! But keep in mind that when you California guys were drinking White Zin, Pabst was plowing more and more bitter hops into their beer. I will take a Pabst over a White Zin anyday.

Dave R,

I'm guessing the Schlitz in a bottle seemed indistinguishable from the draft or canned versions, so it's not such a bad thing; I too would take Schlitz or PBR any day over a white zin.

But you should understand that we SoCal natives are indeed fain to use white zin, if just to top-up the windshield washer reservoirs of our newest convertibles.

Jeff,

I was just giving JT a hard time about the White Zin. However, there is indeed a diference between the current Schlitz in the can versus the new Schlitz which is actually the old Schlitz recipe which now comes in bottles. I know these things for a fact because the new Schlitz (which is really the OLD Schlitz) cleans the soap scum out of my tub better than the old Schlitz in the can that I use to clean out my drains.

Zinfandel Burgers

These burgers are great for a summer barbecue!
2 pounds lowfat hamburger
1/4 cup Zinfandel
(Save rest of bottle to drink with meal) 1/4 cup minced fresh basil
1/4 cup minced red onion
1/4 cup Italian bread crumbs
8 sundried tomatoes, drained and chopped
2 teaspoons garlic salt
Canola spray for spraying on grill rack
6 large seeded hamburger buns
2/3 cup mayonnaise
6 slices Monterey jack cheese
2 tablespoons prepared basil pesto
red leaf lettuce leaves
6 tomato slices
6 thin red onion rings
8 fresh wet basil sprigs for adding to fire


1. Prepare grill for cooking.
2. In a medium bowl combine the following: hamburger, Zinfandel, minced basil, minced onion, bread crumbs, sundried tomatoes, and garlic salt. 3. Divide the hamburger into 6 portions and shape into round patties.
4. Spray the grill with canola oil.
5. Toss the basil sprigs onto the coals.
6. Grill hamburger patties until done (5 to 8 minutes approximately on each side).
7. During the last minute of cooking top each hamburger with a slice of cheese.
8. Mix mayonnaise and basil pesto and spread some of this mixture onto each of the toasted hamburger buns.
9. Assemble lettuce, hamburger, tomato slice and onion slices onto each bun.

This will make 6 servings.

I like a lamb burger, hold the bread, with onion, parsley and pinenuts, and dressed with a little chimichurri sauce.

Does anyone put an ice cube in the middle of their burger prior to cooking? I think I saw Elton do that once because it keeps the burger moist?

Take your ground beef and mix in a couple tablespoons of powdered taco seasoning or taco sauce from a jar (NOT salsa). (I make my own powdered taco seasoning. Recipe upon request.)

Shape into patties and grill to desired temp.

Meanwhile, warm some seasoned pinto beans, NOT refried beans.

In another pan, make some good red chile sauce (I usually start with Bueno frozen hot red chile puree when pressed for time).

When the burger is ready, throw a flour tortilla directly on your gas burner for a few seconds per side to warm and soften it.

Place the flour tortilla flat on a large plate. Put a little red chile sauce on the tortilla. Top with the burger. Cover the burger with some of the pintos. Spoon a goodly amount of the red chile sauce over the whole shebang. Top with grated extra sharp cheddar cheese.

Consume with copious quantities of beer or rocks Margaritas.
