I rub with butter and bake for as long as I have time for. Open up the potato, add butter and salt, and mash up the innards. Eat them. Then add just salt to the skin and eat it. I like it better without butter.

For some reason, I went a couple of years without baking a potato. Finally thought to do so about a year ago. I had forgotten how good they are.

I like to eat the skin, and I bake potatoes bare in the oven.

I used to have a clay pot with a lid that I baked potatoes in: wash them, put them in the pot still damp, put the lid on, and bake in the oven. They came out nice and crispy on the outside, soft inside. But that clay pot broke years ago and I never bothered to replace it. I just bake them in the oven.

Interesting Cynthia and Rahsaan...I was told growing up that the skins on the sweet potato were poisonous to eat. I never even considered eating them. I am talking about the tubers that are related to the Morning Glory flowers. You can eat the skins?

I'm fairly certain the true sweet potatoes have a skin that is essentially undigestable. So not poisonous, but not fun. I'm sure the hybridizers have taken care of that now though.
