Your pie fave?

by Larry Greenly » Sat Sep 16, 2006 9:41 am

Last night I made a rhubarb pie from rhubarb given to me by my cousins. As usual, I added some poppy seeds to the pastry to add a little visual quality and crunch. Yum. Your thoughts on rhubarb?

My favorites are pumpkin and berry pies. So what are yours? And do you have any unusual twists. e.g., poppy seeds in the pastry?

I'm not really a great pie (or dessert) fancier, but it's awfully hard to say no to a well-made slice of hot pecan pie with a little bit of vanilla ice cream on top.

To paraphrase Will Rodgers, "I never met a pie I didn't like" :D
I've tried making pies a few times, but I'm not good at it (so I use store-bought crust). Favorites are Blueberry, Mince-Meat and Apple-Raisin.

My grandmother, bless her soul, couldn't cook a lick but baked a wonderful apple pie. For years, that was my birthday "cake". Apple pie is my sentimental fave but I'm also a sucker for chocolate cream or wild blueberry pies.

Mmmm...Berry pie....

I once won a state fair award with my concord grape pie, which tastes much like blueberry pie.

I guess I'm just not a fruit pie kinda guy. They're ok, but when I think pie I think either lemon meringue or pecan.

Coconut custard. When I was a kid, my Dad would buy one, bring it home, then cut it into thirds for my sister, him, and me. Average lifespan upon entering chez Yaniger was 6 minutes.

Yaniger stole my answer.
Definitely coconut custard. I actually liked the store bought, Entenmann's brand, until my wife baked me one from scratch.
Oh my......what a pie it is.

I wish I could bake that well.

I'm not a pie person but I adore coconut cream pie. Also my aunts Sherry Cream Pie of which I have the recipe for. It is over 60 years old.

Add a hot cup of black coffee and I am right there with you. :)

RC: Sherry Cream Pie

by Karen/NoCA » Wed Sep 20, 2006 7:50 pm

Sherry Cream Pie

1/1/2 cup Nabisco Chocolate wafers(thin)
1/4 lb. melted butter
1 envelope unflavored gelatine
1/4 cup cold milk
3 eggs separated
1/2 cup sugar
1 cup milk
1/8 tsp. salt
1/4 tsp freshly gr. nutmeg
1/2 cup good quality sherry wine
1/2 pint whipping cream
Crush the cookies on waxed paper with a
rolling pin until very fine. Then mix
crushed cookies with the melted butter and
pat the mixture firmly into a 10 inch glass
pie plate to form a pie shell. Chill for at
least one hour. From here on out work
fast....soften gelatine in cold milk. Put the
egg yolks in the top of double boiler, beat
slightly, then add sugar, one cup milk, stir
well and cook for 10 min. or until the
mixture coats a spoon. Take off heat. Add
the gelatine mixture, salt and nutmeg to the
egg custard, and stir until geletine is
dissolved. Add sherry wine very slowly,
stirring constantly. put the custard mixture
into the refer to thicken. When thick beat
egg whites stiff and whip the cream until
firm. Fold in the stiff egg whites and gently
fold in the whipped cream. Chill for 8
hours before serving.
I can safely say this recipe is over 60
years old as my aunt made it for me and my
cousins when we were small children. We are
all in our late 50's and early 60's now and a
feisty bunch we still are!!!! Must have been
the sherry!!!

My grandmother made wonderful pies and never measured anything. One of my regrets is that I never had her teach me how to do it. All her fruit pies were delicious, but I think my favorite, which I haven't tasted in probably more than 40 years, was apricot. There is a great pie bakery here in Columbus called Just Pies; I need to call and special-order an apricot pie before the end of the year.

I'm with Kirk--apricot are the best fruit pies in the world. I also love pumpkin made from fresh pumpkin, and virginal, almost-unsweetened apple pies.

No custard or cream pies. Ever.

Almost in Robin's camp here. We love most of the pies posted here, but the favorite is Northern New England Maple Walnut Pie, made very much like a Southern Pecan Pie, but with maple syrup and black walnuts.

In order of preference:

Apple, here, unsweetened and world class apples.

Key Lime Pie.

Pecan Pie -- a guilty pleasure -- especially with superb vanilla ice cream.

Apricot Pie.

Cherry Pie.

Peach is my favorite, but I've never had an apricot pie...that could change my mind.

Second favorite is fresh blueberry.

Third is apple.

Thanks for looking it up and reposting here Karen. One last questions though...is the sherry a dry sherry or a sweet one? if you recall the name of the sherry you use, that might help too. Thanks again.

Black walnuts! Carl what is not like about them. I love them sprinkled (heavily) on vanilla ice cream! Of course then it becomes black walnut ice cream I suppose! :-)
