What's for dinner?

We had black bean enchiladas last night, along with apple pie. We have some pizza dough in the fridge, so that might happen tonight. Maybe.

Salisbury Steak with Mushroom Sauce*, roast Baby Yukons, and salad. It's just Tuesday.

*Mushroom Sauce:
1/2 lb Plain ole mushrooms sliced (caps only)
3 Tbl EVOO
Salt & pepper mill
2 tsp Arrowroot
1/2 Beef stock (boxed)
1/2 C Port
2T Sherry
1/4 C Ketchup
1 tsp Dijon mustard
1 tsp Worchester sauce

In a wide saucepan cook mushrooms seasoned with s&p in oil, and remove to a bowl. Combine wine and stock together in a measuring cup. Put arrowroot in a small dish and dissolve with some of the liquid. Combine ketchup, mustard, and Worchester in another bowl. Add liquid and dissolved arrowroot to saucepan, and bring to a boil. When thickened, add ketchup mixture, and mushrooms; and simmer a few minutes.

Split broiled Salisbury Steaks (or any other broiled or grilled ground meat) and pour sauce all over.

Pizza would be OK, but we're out of arugula for salad. How about potstickers and maybe a stir fry of green beans and tofu in a red chile sauce?

My staff has requested that you not make black bean enchiladas again, or at least don't let me have the leftovers for breakfast.

It was a big pizza. I used 6 cups of flour for the dough and spread it out on a large cookie sheet. Toppings were prepared spaghetti sauce, 1/2 pepperoni, fresh mozarella, lots of large portabellas and olive oil. Who knows - maybe when I get home from work my sons will have finished it and I'll have to cook something else.

Stuart/Cyn,
What filling do you put into your (presumably) vegetarian leftovers? I can't say that I've seen much variation from the traditional pork/ginger theme.

Goes like this:

Salisbury Steak:

1 lb Ground beef
1 tsp Seasoned salt
1/4 tsp Ground white pepper
1/4 tsp Ground celery seed
1/4 tsp Granulated garlic
1 tsp Dry marjoram
2 Tbl Port or red wine
4 Scallions minced
1 Tbl Parsley minced

Mix all together, form into two thick oval patties, and refrigerate for a few minutes. When sauce is getting ready rub patties with OO and broil or grill fourteen minutes, turning once.

I have a 3 hour board meeting tonight (just shoot me now) and they are providing a light supper. I'm not sure what that means, but I'm guessing it won't be anything warm. Sandwiches maybe.

I wanted to open a new package of dried cannellini beans, so I picked Swiss Chard and two kinds of Kale from the garden this morning. A quick check in the refer , I found a fennel bulb I needed to use, three stalks of celery, half an onion....threw in garlic, pancetta, bay leaves, spices, a bit of wild rice and made a very tasty soup. I have garlic sourdough that will go under the broiler. It only got to to 42° here today and is starting to rain...dinner will hit the spot!

Since I'm still bacheloring it and since the cupboard is pretty bare, dinner will probably be takeout from the local roadhouse. Passable food and cold beer.

In California, vegetarian versions were legion. Mine will have anything I can scrounge up in them- sort of like ravioli in that sense. A typical filling might have minced marinated tofu, cabbage, mushrooms, water chestnuts, garlic chives, and cellophane noodles. I've also done versions which had the Chinese equivalent of duxelles- these were VERY wine friendly. And (he admitted with a slight blush) sometimes I'll use the Chinese fake meat.

We had roasted chicken, baked potatoes, and some kind of greens that were in the CSA box (maybe collards)? The greens were sauteed in the fat left over from browning the chicken and finished with anchovy syrup.

A very tasty midweek meal.

A chicken reuben sandwich and a few bottles of Rolling Rock while watching the Florida-Kentucky basketball game. Good finish!
