Slow Monday troll: What's for dinner?

I am overrun with vegetables at the moment, in particular garlic, carrots, chard and black kale, and I have a single but handsome large bulb of fennel perfect for roasting. So dinner shall be a light and summery meatloaf made of ground chicken and pork with lots of herbs, grated carrots and zucchini, baked alongside sliced carrots, celery, the halved fennel bulb, whole garlic cloves and a pile of sauteed mixed greens. A few slices of heirloom tomato with crumbled chevre and thyme will likely be our starter, and the wine will be either a Brun Beaujolais or a light but complex Washington winery called Piety Flats.

What's on at your house?

My Dad is cooking for us. He says it will be slow-roasted pork belly, saurkraut and mashed potatoes. I'm to bring a salad, probably will be heirloom tomatoes with basil and a little goat cheese, since that's what I have on hand. Weird meal for this time of year, but hey, you can take the German out of Germany but you can't stop him from eating saurkraut in the summertime.

Damn, I haven't been doing anything very creative this summer. Just simple stuff tonight - a thick, pan-seared locally grown pork chop, mashed potatoes and a nice garden salad.

I think Jim is roasting a chicken (vertical roaster) in the oven.

Last night's dinner was much more interesting: big pork chops on the grill, preceded there by red pappers, baby yellow squash, pencil-thin green asparagus, slices of baked potato, and a small whole wheat loaf cut & toasted. Everything dressed with EVOO, garlic, basil, savory, s&p.

I love that kind of dinner.

My plans just got tubed: I went to check on what I had thought was the thawing meat loaf mix, but instead I had thawed out some kind of sauce I don't remember making, with big chunks of meat running around in it. Something you'd put on pasta or potatoes, and not at ALL what I had in mind. In the meantime I'd been going through my spice stash for my next Penzey's order, and all the Indian spices were talking to me. So what I did was saute diced onions and garlic plus fennel and khala jeera seeds, then added a masala type curry powder, chimayo chile (thank you, Larry!), a few scoops of that sauce and a cup of broth to thin it out. I just added rice, so it will be a meaty curried rice dish in about 20 minutes. No, it's not dinner time yet, but this is the kind of dish that tastes better cooked and reheated because it's more intensely flavored after all the steam evaportates. It will be tasty, but I feel pretty foolish about the mistake. (Wonder where that ground meat went?)

What's a zanzibari fish--is it a particular type of fish or the name of a dish?

Marinated and grilled flank steak served with a cilantro, jalapeño sauce - half was used for the marinade. Plump Soup Barley Salad, with grilled endive and corn, three Peppadew peppers, chopped fine for color and a kick, basil, chives and a lemon, red wine vinegar, EVOO dressing. Sautéed garden spinach with garlic, fresh tomato slices with s & p.

I'm having a neighbor over after the kiddos go to bed for drinks and food...I am doing a bunch of appetizers:

- Bacon wrapped dates
- Shrimp Summer rolls with dipping sauce
- Pork Carnitas with roasted corn salsa
- Grilled curry lamb served with Tzatiki sauce and Naan bread
- Fried Raviolis with marinara

Hope she likes it...I know I am very excited (I don't get much company around here...LOL!)

LOL Jenise...I have done that sooooo many times. I should really start labeling my stuff. I am sure you will make something delicious with it though..can't wait to hear.

Cynthia...I would invite you over, but there will be lots of CILANTRO here...:lol: !

Smoked sockeye salmon, cold sliced Fuji apple, cold sliced cucumber, dill and yogurt dip, pita garlic crackers, Billecart Salmon NV Brut Reserve.
