What did you make for dinner on this Monday night?

I am making a German-style Pot Roast which is a simple version of Sauerbraten. Recipe calls for Campbell’s French Onion Soup, along with other ingredients. Crushed ginger snap cookies are used to thicken the broth.
In the book, I noted that Gene really loved this dish, so decided to try it again. Serving over garlic mashed spuds. Sides are red and green beet greens, an unknown type of round yellow squash baked with brown sugar, butter, cinnamon. Sort of like an acorn squash, but round and speckled with white.
Tomorrow night with the leftover meat and spuds, I will make coleslaw to round the meal out.

Karen, I made Chinese pork and shrimp dumplings this afternoon. Will steam them later and serve with a chinese cabbage salad.

I had made some classical New England Clam Chowder a couple of days ago so I started with a bowl of that. Delicious when you begin with bacon.

And then today I was at Costco so I got one of their rotisserie chickens. What a bargain, tasty stuff with no effort whatever.

Frank, I love being at Costco in the afternoons, too. Most of the time, I'll get tortillas there too and stuff for a pico de gallo, and that's dinner--roasted chicken tacos. As much as I love cooking, quick and effortless has it's appeal after a long day of doing errans, and it's a bonus smelling that bird all the way home.

Bad night to ask me that question ... we dined out at an upscale-casual chain, which is very much NOT my usual pattern. Still, the chain - Buca di Beppo - is more fun and better food than most, in my opinion. I was pleased to see that the notorious "Pope Room" had been updated to Benedict since my last visit.

Dinner: Omelet filled with fresh baby spinach leaves which I briefly sautéed in butter and seasoned with salt, fresh cracked black pepper, garlic, and a teeny tiny grate of fresh nutmeg. Rye toast on the side.

Dessert: Banana dipped in honey with a pear chaser.

Who says single guys living alone don't eat right?

Homemade Chicken Soup with Ancini de Pepe pasta, baby carrots, onions, chopped celery, chopped spinich with two whole cloves of garlic, extra virgin olive oil, sea salt and fresh ground pepper.


Warmed sourdough bread and Sauvignon Blanc served at the table.

Me too. Yesterday I made a good size pot of a stew. I started with the basic Beans & Greens Soup recipe, but used beef stock instead of chicken and added lentils, barley and ground beef. It's too thick for soup, so it must be a stew. Pretty tasty too!

Baked sweet potato w/ just a little butter, grilled chicken tenders, and a simple salad of mixed greens and sugar snaps.

Paella vegetale.

Leftover buffet. It was time to clean out fridge.

Meatloaf and potatoes. Chicken enchiladas. Rice. Broccoli with garlic and lemon.
Complemented with a green salad and nice cold glass of water.

Old fashioned Swiss Steak with lots of carmelized onions. Brussels sprouts, steamed, buttered with Penzey's Fox Point and garlic mashed potatoes. Long on comfort and filling.

Appalachian polenta - corn meal, sage sausage, pepper jack, diced jalapeno peppers and topped with crushed taco chips, steamed okra on the side.

My wife is under the weather and wanted just soup, so she got a bowl of Dutch pea soup I made the day before.

I had spaghetti (to use up some leftover sauce) and a tossed salad.

We both had some of my bread about an hour out of the oven.

Roasted pork tenderloin with an apricot jam glaze, Mashed potatoes, and roasted orange cauliflower.

Hmmmm.....lots of excellent dinners for a Monday night.

Now THERE'S a blast from the past. It's something my mother made when I was a child and I have't seen/had/or almost even heard of since. I wonder why it's called Swiss....? I'll see if I can find out.

Monday night was a good night around here.
Like you, Karen, I went back to a recipe that I made note my husband loved for the main course.
For the side dish, I had watched Ina the day before and saw her make a vegetable Tian from her Barefoot in Paris book, so I made that. It was very pretty and good (but not Oh-My-Gosh good).
The dish my husband loved is a Bon Appetit recipe I found on epicurious a few years ago. Chicken with Sherry, Oranges and Green Olives. I used bone-in thighs and it truly was delicious. The sauce it makes is unbelievable.
The salad was arugula, small-diced apple, toasted walnuts tossed with my own Champaigne vinaigrette and shaved parm-regg.
Dessert was small hunks of good dark chocolate.
