What kitchen gadgets do you consider essential?

Jenise and I discussed my efforts to keep my kitchen gadgets to no more than 20 items, and Cynthia suggested that we start a separate thread on the subject.

Basic question: what are your essential kitchen gadgets?

In my case, I've tried to limit my set to 20 items, primarily because I come from a long line of obsessive collectors, and cooking has become something of an obsession over the past three years. I'm aided in this effort by Janet's dislike of cluttered kitchen counters.

Kitchen Gadget List.

1. 8 inch chef's knife.
2. Whetstone.
3. 3 quart covered pot.
4. Steamer basket.
5. Measuring spoon set.
6. 12 quart covered pot.
6. 10 inch saute pan.
7. Large double oven in the form of a large skillet, four inches deep.
8. Small food processer.
9. Ice cream maker.
10. Pot holder.
11. Wooden pizza peel.
12. Rolling pin.
13. Pizza cutter.
14. Tongs that are also be used as a spatula.
15. Thermometer.
16. Ladle.
17. Wooden mixing spoon.
18. Mixing bowl.
19. Measuring cup.
20. Flat baker's pan.

We have some items that serve double duty, especially bowls that are pretty and often used for serving food, but sometimes used for cooking food -- a set of four Cazuelas from Spain, for example. And I agonize about including my corkscrew in this list from time to time, but make every effort to find a screw cap wine for cooking purposes. We also have two can openers, which go into Clive's list of gadgets since they are both used more for opening his cans than ours.

One other weak spot in the gadget list: we do have a stove, a Viking grill, a Foreman type grill, a toaster, a waffle iron, a microwave, a dishwasher, a sink, a portable cutting board, and compost and recycling bins, all of which I use from time to time in my cooking efforts. As you can see, the definition of "gadget" is pretty tight, and if they were included I would have to increase my 20 gadget limit to 30 items.

On the knife front, when I lost my sight for a couple years ago, I learned knife skills using just that one knife, and I've never cut myself with it. From time to time folks give me a knife as a present, and I invariably donate them to the next animal shelter auction. If I had to get rid of a gadget to add another one, the vegetable peeler would go -- until two months ago, I used the chef's knife to peel everything, but my yields have gone up since buying an elegant little peeler.

PS: just as I was ready to post this, I realized I use a spin dryer -- one of the best performing devices I've ever owned. I'm going to have to go over that list again and pare it down by one item. Darn it! B.

1. More metal bowls than anyone should own- I'm nutty for mis en place.
2. Chinese cleaver- I paid $6 for it 25 years ago.
3. Paring knife.
4. Oxo peeler.
5. Medium and large sautee pans.
6. Medium and large saucepans.
7. Bamboo steamer.
8. Atlas pasta machine.
9. Tongs.
10. Silicone spatula.
11. Fine and coarse graters.
12. Fine serrated (Ginsu-type) knife.
13. Pizza stone.
14. Cutting board (one wooden, doubles as a peel, one HDPE).
15. Coffeemaker.
16. Whisk.
17. Measuring cups.
18. Strainer or chinois.
19. Salad spinner.

Nice-to-haves:

1. Mandoline.
2. Blender.
3. Food processor.
4. George Foreman grill
5. Waffle iron.
6. Toaster oven.
7. Pastry brush.
8. Wooden spatula.
9. Kitchen scale.
10. IR thermometer.

I agree with the pizza stone, Stuart -- it's an essential part of our Viking grill, so important that I don't even consider it a separate item.

It's absolutely essential for pizza, but it distributes heat beautifully for drying or roasting vegetables, baking cookies and breads, etc. I can use the grill year around, primarily because the stone is in there.

I had to give this some thought.

Of the stuff I currently have...

Essential:

* my Kitchen Aid mixer (I have nerve damage in my hands and can't mix or knead by hand)
* chef knife
* paring knife
* bread knife
* pizza stone and peel
* rotary pizza cutter
* silicone spatulas
* Le Creuset Dutch oven (although another kind would do)
* 3 sizes of saucepan
* stock pot
* 2 sizes of saute pans or cast iron skillets
* food mill
* set of 15 nesting glass bowls
* cork screw
* large oval terra cotta roaster

Love, but could live without:

* pressure cooker
* slow cooker
* ice cream maker
* Foreman grill
* coffee maker
* wooden spoons
* food processor
* blender
* vegetable peeler
* ladles

So far only Stuart included the kitchen scale as a "nice-to-have." We consider it essential. The only thing in the kitchen we use more is the tea kettle. The latter is our coffee maker, since we grind coffee, put it in a cone with filter over a caraffe, and pour boiling water over it.

I won't go by what we have because my wife is a hardcore baker and is of the firm opinion that she needs every size of every shape of every cake pan made. As well as sheet pans, springforms, tart pans, etc. We literally can not close one of the doors of the cupboard that holds her baking stuff because of this which (yes) drives me nuts. But she loves to bake and she does it well, so I live with it.

On my end, the essentials would include:

2 sizes saute pans
large and small saucepans
Dutch oven
mixing bowls, glass and/or stainless, ~6
wire whisk
mixer
3 knives - chef's, slicer, and paring
cutting board (if that counts)
peeler
cocktail shaker
muddling stick
cocktail strainer
wooden spoons
silicone spats
nylon or metal spats
cheese grater - Microplane or box, used for hard cheese
coffee maker
colander
pepper mill
pyrex baking dish
measuring cups/spoons

Nice to have:

blender
food processor
coffee grinder
espresso maker
toaster
other knives - tomato knife, serrated bread knife, cleaver
spice grinder (really an extra coffee grinder)
splatter screen
wok
roasting pan
cooling racks
pasta machine
meat grinder
dough scraper
pizza stone

In my wife's world, it is the primary duty of the male to prepare the evening cocktail. She got this from her folks who do not drink wine but have a whopping big mixed drink prior to supper.

So the shaker, strainer, and muddler are absolutely essential at our house!

I don't consider pots and pans or knives gadgets. They are essential tools. The following are my most used gadgets.

I wondered if you would notice that bit of male hypocrisy, Cynthia. :)

It appears that I'll either have to bump up that number or re-define what a gadget is. I just realized I have a neat scrapper/steel wool cleaning gadget -- oops, device -- for cleaning the grill.

And some folks have listed some really neat gadgets here that are awfully tempting.

Two additional items I don't see mentioned but that I use a lot: cherry pitter and apple (pear, etc.) corer.

Essential? No, especially since you can either do the task with something else or figure another way to use the fruit. But for time savings and ease of use I'd just as soon not do without these.

I thought about listing my corer/peeler/slicer, but as you say, it's not essential.

However.... cherry pitter! I don't see how I could do without that!! When I need it, I really need it.

A neat way to pit cherries is using a metal pastry bag tip. If you put the cherry on top of a beer bottle first, you'll end up with the pits in the bottle at the end of the task.

Wear gloves.

And, there are two more gadgets in my arsenal -- the pastry bag kit -- great for potato puffs, etc. -- and gloves for messy stuff like beets, or in my case, to keep rose scratches away from the food.

I'm thinking 50 as a realistic limit for "gadgets" broadly defined.

Hey Stuart. Finally found my way to the new place. And (more importantly) had time to get online.

After just pitting 4+ pounds of cherries to put up some cherry cordials, I can't imagine doing it another way although I have used the method Bob mentions. For more than just a handful though, give me the pitter.

"Gadget" to me means something like my Benriner mandolin. A cheap but very effective gadget that I am using so much this summer that I now consider it essential.

Well, as a practical matter, I do. At least in the gadget world.

Janet's given up cooking but insists that we keep all of her gadgets -- they take up at least 80% of our storage space. And she insists the countertops are for flowers and such.

If my gadgets don't fit in one drawer and two shelves, I have to hide them away in the basement. Then, out of sight, out of mind. So why have them?

And, even if I negotiated more shelf space, I've got that collector's instinct to deal with.

But, gee, some of the lists in this thread contain some real temptations.

Cynthia, who needs to be realistic indeed! :)
