Low-carb pizza

I'm phasing back into my quasi-paleo diet after indulging too many times over the holidays.

I found some low-carb whole wheat tortillas made in Santa Fe. Ten inches in diameter, they have only 6 grams of carbs. I piled on the toppings and baked the personal-sized pizzas for just a couple of minutes. Not bad at all; I'll be doing that again.

OTOH, I baked some potato bread last night. Came out great, and potato bread toasts wonderfully and lasts longer than other breads. (I only had a heel last night; Edie will eat the rest.) Damn carbs... :evil:

Yeah, I had to lay off baking for awhile. Making two loaves a week, I gained 10 pounds. Bob ate more of it than I did but, of course, didn't add an ounce. Damn carbs.

Boy is that the truth. Carbs are my downfall. I just love STARCH. Potatoes, bread, rice, pasta...they're all my weaknesses.

Yeah. More than once, I've made Edie spaghetti, bread, and a tossed salad while I have a big steak, mushrooms, and a tossed salad and say "I'd rather have yours." Even a PB&J sandwich would be nice. Around Xmas, I was fantasizing about a barrel of potato chips. And giant sourdough hard pretzels while watching flicks. :(

Back in the 90s, I visited Snyder's and Utz's pretzel factories in PA (which is the snack capital of the country). Fascinating. And, on one trip, I brought back some pretzel salt--big and cubic.
