WTN: Servin 1er with sole

Panko crusted grey sole, kale salad with feta, sweet potato
2023 Servin “Montee de Tonnerre” Chablis 1er
I used to think of Servin as a good but unexciting producer, but every bottle I’ve run across in last couple years has impressed- including this one. Bosc pear, seashell, saline, with a floral note with some air. Keeps evolving, with lime zest and wet rocks coming to fore. Bright acids, clean fruit, minerally finish. Need to get more. A-/B+

Grade disclaimer: I'm a very easy grader, basically A is an excellent wine, B a good wine, C drinkable. Anything below C means I wouldn't drink at a party where it was the only choice. Furthermore, I offer no promises of objectivity, accuracy, and certainly not of consistency.

I'm a big fan of Servin, Dale, after Matt Latuchie opened one up for me in Chicago a decade or two ago. They may lack the concentration of Dauvissat or Ravenau but have the purity and cut that I look for in Chablis.

I have some Duplessis Montee de Tonnerre that is very good too. I keep thinking that I should cellar more Chablis! I've also got the
Cru Fourchaume from the same producer - have been intending to compare the two.
