So I made a small batch of guacamole to go with our holiday weekend burgers. We tend to open Rosé Champagne with burgers so that Laura has wine she likes, and I have something semi-red.
Tonight it was a rather disappointing bottle of NV Ployez-Jacquemart Champagne Extra Brut Rosé. It just couldn’t get out of its own way…until we had the guacamole! Somehow the guacamole brightened and freshened the Champagne, and brought out the fruit. All we could think of was the lime juice in the guacamole somehow marrying with the Champagne, but it was a total shock! I grabbed an extra glass, and poured some Cab to go with my burger, and kept the Champagne for the chips and guacamole!
Bizarre!
