Having a dinner with a lot of green elements, in this case spinach, peas, and dill, I would normally have pulled a Grüner Veltliner. I wanted to test out Sylvaner, so this was the choice. A touch more fruit forward than Grüner, but it still handled the green food with aplomb. No clashes, just a bright top note that likely latched onto the lemon zest that was added at the final step. Excellent acidity, dry, and refreshing, this can slot right in where my go-to green-friendly wines play.
