2020 Cuvee Eva Élevé en Fût de Chêne
Golden yellow color. A tad oxidative on day one, didn't like it a bit. But, surprise surprise, fruit came forward on day two (bottle left uncorked in fridge overnight) and it filled out, in fact I liked it a lot. Day three (bottle still uncorked and in fridge): drinkable but emptyish compared to the night before. Was surprised to read the back label after all that and learn that it's 100% Sauv Blanc. Would have bet everything including the cat on it being 100% Semillon.

It fooled me too - it doesn't really taste like sauvignon blanc at all, and I would have bet a healthy portion of semillon.

I note that the CT site lists it as a blend. Must be a victim of vintage variations.
