1995 Chapoutier Cornas - we did dinner at a local bistro that has a background in fine dining if the French sort and puts on special prix fixe dinners over the year and I pulled this one out to go with a meal of pear an blue cheese tart, boeuf bourguignon and riz au lait et caramel sale.

This basic Cornas (my last bottle) showed consistently with the previous ones. Now light red tinged with pale edges, it had a good characteristic nose of earth and red fruit and an underlay of black peppery notes (but not to too forward). It drank well and has mellowed nicely So nice to see an older bottle age gracefully and still provide pleasure 30 years on. BTW, CT predicted that this wine would be at the end of life by 2009! I am still waiting on my 96 and 97 Clape to achieve this stage!

I was lucky enough to have a taste.
It was a perfect match for the boeuf bourguignon.
Fully resolved and everything in balance.
