More depperblitz from TheBloodyPulpit:
1. They had a new cheese in at Picnic NM called Caspian from JasperHillFarms in Vermont. It is a cow's milk cheese made in the style of a Tomme de Savoie, one of my favorite rustic French cheeses. The cheese is an outstanding replica of Tomme de Savoie, but a little cleaner & not quite as rustic. So I thought a Savoie Mondeuse would be a good pairing. Savoie Mondeuse is one of my favorite wines. This Mondeuse was not quite what I expected. Not as soft/drinkable as most Savoie Mondeuse, it was a pretty rugged/rustic expression of the grape. It may age into something interesting but I have some doubts.
