this was my last non-Champagne fizz of August.

N.V. Hattingley Valley Classic Cuvée Brut

This was an ESW from the county of Hampshire in England from a family own winery that started in 2008 by planting vines ion their farm.

Unlike the French with Cremant, the Spanish with Cava, and the South Africans with MCC, Britain doesn't a snappy designation for fizz made by secondary fermentation in the bottle, ESW (English Sparking Wine) is currently used.

I bought 6 of these from the winery in July 2020 and opened one soon after. It tasted characterless then, so I've kept them, having the odd bottle over the years and seeing it improve.

Now with 5 years additional bottle aging it is a jolly good fizz, smooth integrated with some crisp appley flavours and a depth. Shame I've only got one remaining.

Don't you hate that. You buy six, taste them over time and when you finally find the magic it's your last or next to the last bottle. Happens to me way too often.
