acid attacks

Thanks for the acid taste suggestions. Any info/suggestions as far as helping to distinquish acid attacks as 1st, 2nd and 3rd? thanks.

I don't undertstand the question either. Are you thinking that the acids hit you at different levels or waves on your palate? If so, that isn't going to get you anywhere. Mostly, acidity is melded as an overall sensation, usually attacks the sides of the tongue and, as in my case, I can sense it on the swallow too, but I think that's my brain confusing the fact that all the sensations are married at about that time.

Truly experienced tasters, and especially winemakers, can often pick out the acids that are important in the sensation of a wine--especially when acidity has been adjusted by a winemaker and citric acid is the medium used...a bad idea in my book.
