This was shut down hard when I opened it the other night, so I splashed it into a decanter. Well that just made it mad. I checked in on it over three hours, and it just would not budge. 24 hours later, same thing. I ended up doing something I almost never do, leave a big glass for 48 hours later. Well that finally did the trick. It’s bone dry. The fruit has opened up, though it’s still super crispy. What’s really come to life is the spice that comes from the soils in this part of the Rheinhessen. The wine is the spice. The spice is the wine.
