2021 Devils Corner Chardonnay Resolution East Coast Tasmania
Fruit's just a touch ripe for my liking, but there's some interesting exotic notes in there, plus the generous minerality and high acidity provide good structure and balance. For Xmas Eve dinner I'm making a course that will be seared scallops with a mustard/lime/garlic/dill/butter pan sauce. Hadn't planned this wine for that but now that I've had that, what could be better or more interesting.
