Roast chicken with black garlic, turnip green colcannon, and the 2005 Ch. Poujeaux (Moulis en Medoc). Pretty classic ripe vintage Medoc, rich cassis and black plum framed with tobacco leaf, herbs, and just a whisper of vanilla. Still a bit of tannin, nice balance, not a ton of complexity but pretty good for $25 Bdx! B+

Sheet-pan Gochujang shrimp and green beans, with rice and the 2018 Reichsgraf von Kesselstatt Riesling Josephshofer Kabinett Feinherb. This is quite a bit sweeter than I expected with the feinherb designation (in the old days this could have been a Spatlese), but still a nice wine. Peach, herbs, and orange creamsicle. Sweetness actually works well with the spicy dish, though by itself a touch sweeter than I’d hope. Good acidity though, so not at all cloying. B/B-

Oysters, skate in brown butter with capers, assorted leftover starches and greens,
2021 Yves Martin Sancerre Chavignol. Citrus, some light grass, long limestoney finish. Full and balanced, B+

Grade disclaimer: I'm a very easy grader, basically A is an excellent wine, B a good wine, C drinkable. Anything below C means I wouldn't drink at a party where it was only choice. Furthermore, I offer no promises of objectivity, accuracy, and certainly not of consistency.

Ha! Well when I was writing my response I was thinking about the end of the “too sweet for its pradikat” era, and my thoughts went to “what about 2018?”
